Silencing Tabla
The Indian fusion restaurant Tabla launched by famed restauranter Danny Meyer’s has become a victim of the U.S. recession and is shutting down.
The restaurant’s executive chef Floyd Cardoz, who became famous for his Indian fusion cooking, will remain with Meyer’s company to work on other projects. Tabla featured such novel Indian fusion foods as Paffenroth Gardens Pumpkin Rasam, Apple and Fingerling Potato Chaat, and Banana Leaf Roasted Baby Goat appetizers; entrees, such as Rawa Crisped Skate, Sweet Spice Braised Oxtails Pulled Lamb Sandwich; Nueske’s Bacon bread and desserts, such as Tahitian Vanilla Bean Kulfi and a black pepper and basil ice cream called Red Jacket Orchards Plum Crisp. It sold tasting menus for $56 to $72 per person. “We fought valiantly for nearly 13 years trying to fill 280 seats with food that is tightly focused,” Meyer told the New York Times. “I’ve never closed a restaurant before.” |
