Chicken Tikka Masala Sizzles

A Glasgow chef is seeking to patent chicken tikka masala, outraging culinary experts and Indian chefs.

 

Ahmed Aslam Ali, owner of the Shish Mahal restaurant in Glasgow, claims to have invented the dish in the 1970s, prompting a Labor Party member of parliament from Glasgow, Mohammed Sarwar, to secure designation of the dish as “Protected Designation of Origin” from the European Union.

Food historians and many Indians chefs assert the dish has existed for generations, perhaps as far back as the 1850s in the court of Mughal emperor Bahadur Shah Zafar.
